The "réseau d'information en sciences de la cognition" (RISC) is a very active network of information about cognitive sciences in France and beyond and maintains a database of volunteer participants in the Paris area. This database can be accessed at http://expesciences.risc.cnrs.fr/formulaire_expe.php.
